SCALLOP RECIPE

For the Scallops:

  • 1 tbsp of olive oil in a pan, medium heat
  • Add ground pepper and chili flakes
  • Watch them sizzle and turn over after 2 minutes
  • Keep flipping them until they are brown and a bit crispy on the outside

For the Salad:

  • On medium heat put the corn in a pan,
  • Drip some olive oil from the scallops over it and cook until the kernels start to brown
  • Add the quinoa and mix on low heat
  • Add some chili flakes and lemon juice
  • Add chopped green onions
